Reuben Made Beef Stew for Lunch
This Reuben Casserole made with corned beef, swiss cheese, and sauerkraut has all the delicious flavor you know and love with none of the hassle.
This is one of my husband's absolute favorites; you're going to love how easy it is to get that classic flavor in one simple dish. Serve it alongside some quick sauteed vegetables and finish the meal with our mint grasshopper fudge!

Reuben Casserole Ingredients
- Cooked corn beef – Cut into small pieces. I like to used leftovers from our corned beef recipe. If you don't have any corned beef on hand, feel free to grab some from your local deli. Pastrami will work in a pinch too.
- Marbled rye bread – Cut into small cubes. You could also use regular rye bread.
- Swiss cheese – Finely shredded. If possibly, avoid preshredded cheese as it will not melt as well.
- Russian dressing – Russian dressing is typically pretty easy to find at your local market, but if you can't locate it, Catalina has a very similar flavor and can be substituted.
- Mayonnaise – Don't skip the mayo! I promise, it helps keep the bread moist and the cheese creamy. It's good stuff.
- Sauerkraut – You can usually find a jar of sauerkraut in the deli or on the shelves near the pickles.
How do you make a Reuben Casserole? (Step-by-step)
⭐ First , mix corned beef, bread, swiss cheese, dressing, mayo, and sauerkraut together in a large bowl.
⭐ Next , pour everything into a casserole dish, scraping the sides of your bowl well to get all the casserole ingredients out.
⭐ Then , using a large spoon or spatula, press casserole into dish so everything is tightly packed.
⭐ Finally , bake uncovered on the center oven rack until heated through and beginning to brown on top.

Can you make a reuben casserole ahead of time?
You can prepare the casserole up to a day in advance and store it covered in the refrigerator. Bake immediately before serving. You may need to add an extra 10 – 15 minutes of bake time to compensate for the lower starting temperature.
It can also be prepared in advance and stored covered in the freezer for several weeks or even up to a few months. Thaw overnight in the refrigerator and bake as described above. Or, to bake from frozen, cover in foil and bake approximately 90 minutes total, or until heated through completely. The 15 minutes can be uncovered to allow the top of the casserole to brown.
How do I make it gluten free?
To make the reuben casserole recipe gluten free, you'll want to substitute a gluten free bread for the rye bread.

How long does the casserole last?
Leftovers will keep in the refrigerator for up to about three days. Make sure to cover and seal tightly before storing. You can also save leftovers in the freezer for several months. Allow the casserole to cool before storing in a sealed container in the refrigerator.
How do you reheat the leftovers?
We find the leftovers are best reheated in the microwave for about 90 seconds to 2 minutes on high power per individual serving. It can also be reheated in the oven or in a toaster oven.

Rye is one of three grains that contains gluten, so no, rye bread is not gluten free and neither is this casserole as written. That said, the rye bread can be substituted for gluten free bread for those who are avoiding it.
Is corned beef the same as pastrami?
While corned beef and pastrami are both made with beef, they are actually entirely different cuts. They are also cooked and eaten differently. Both cuts of beef are cured with brine, but the cooking process differs after that; corned beef is boiled (we do our corned beef in the slow cooker or instant pot) while pastrami is smoked.

- About 2 pounds cooked corn beef small diced
- 1 loaf marbled rye bread 16 ounces, small cubed
- 1 pound Swiss cheese finely shredded
- 1 cup Russian dressing
- 1 cup mayonnaise
- 1 cup sauerkraut

Pour everything into a 9x13 casserole dish, scraping the sides well to get all the casserole ingredients out.

Bake uncovered on the center oven rack at 350 degrees for 30 - 45 minutes, or until casserole is heated through and top is browned to your liking.
- This is a great recipe to use up leftover corned beef from the holidays, or if you want it on a random Tuesday in February, hit the deli for some sliced corned beef!
- If you are unable to locate corned beef, Pastrami has a very similar flavor and can be substituted.
- If you are unable to locate Russian dressing, Catalina dressing has a very similar flavor and can be substituted.
- It is always preferably to use freshly shredded cheese as opposed to pre-shredded because pre-shredded cheese contains anti-caking ingredients that can inhibit melting. That said, this recipe will still work with pre-shredded cheese.
